Paleo baked goods will be the death of me. It’s been a particularly dreary day – rain, wind, tornado watch, etc. I got in the baking mood (again) today and decided to make these little treats. We don’t have brown sugar in the house and I didn’t feel like spending money on it, so I subbed one tablespoon of shredded coconut and one tablespoon of raw honey for the two tablespoons of brown sugar. They turned out better than I expected. Fluffy and moist and mouth-watering. I’ve had four already.
This is my attempt at this recipe. Unfortunately, it didn’t end up like the picture in the link. I knew from the batter that it wasn’t quite right – it was a bit too liquid-y. They ended up more like almond flour soft cookies, not biscuits. I ended up using two “cookies” as bread slices and made a bangin’ egg, spinach, and bacon sandwich. I haven’t had a “sandwich” in so long – I had forgotten how filling they are!
